Bake some homemade buttermilk biscuits with Chef Allison Davis
· 2 and 1/2 cups of all purpose flour (preferred king arthur)
· 2 TBSP baking powder
· 1 tsp salt
· 1 tsp sugar
· 1/2 cup very cold unsalted butter
· 1 cup cold buttermilk
Preheat the oven to 400 degrees. Place the dry ingredients in a bowl or food processor. Whisk or pulse until combined. Add in the cubed cold butter and cut into the dry ingredients with a pastry cutter or by pulsing the food processor several times. (It should resemble coarse cornmeal)
Make a well in the center of the mixture and pour in the buttermilk. Stir together until just combined. Be sure not to overwork the dough. Turn the dough out onto a lightly floured surface. Gently roll the dough out with a rolling pin until its about 1/2 inch thick. Cut into 3 inch circles. Re-roll any scraps until you have made all the biscuits. Arrange in a 10 inch cast iron skillet or close together on parchment paper. Brush the tops with 2 TBSP of buttermilk. Bake for 15 minutes or until the tops are golden brown.
